Food

We all love it..We all need it...But do we really know how to cook it? NO we don't and I will tell you why, because we are so caught up in work and family and activities and this and that, we don't realize that homemade can be easy and CHEAP too. You can make a 3 course dinner for as little as $20, yes I know that sounds like a lot but that's for 6 people!

We are going to explore that here and we are going to make it fun easy and Gourmet...on a budget!!

Homemade beef stroganoff

Start with fresh beef stew meat or boneless rib meat. Cut into small pieces {see image below} and season with spices {I used sea salt in a grinder, garlic pepper in a grinder, onion powder, seasoned meat tenderizer, black peppercorn in a grinder, garlic powder, and seasoned salt} I used 4-5 lbs of meat. Next sear it in a pan on med heat with a little EVOO and then put in a bowl {see photos}. Boil water for egg noodles. heat mixture with meat till simmering. Remove from heat & mix with noodles or you can leave on side. Serve in a bowl.

Shrimp, tomato, yellow pepper, & orange pepper Bruchetta

Tomato, yellow pepper, orange pepper, shrimp, and spices sauteed in olive oil then placed on a piece of french bread toasted in olive oil.

  1. drizzle a small amount of 100% olive oil in skillet and heat on med-low heat
  2. cut up tomatos and peppers into small cubes and set aside
  3. peel and devain shrimp if not already done
  4. on a plate lay out slices of bread and drizzle with small about of olive oil
  5. when skillet is heated place shrimp in and sprinkle with garlic {or add fresh garlic clove its whatever you prefer}, onion powder, and italian seasoning
  6.  when skillet is heated place in peppers and tomatos so they over bottom of the pan but dont heap {heaping causes them to become soggy and unevenly cooked} you may find that you need to drizzle with more olive oil {if so add a little at a time make sure it cooks down some or it will become soggy and greasy}
  7. sprinkle garlic {or add fresh garlic clove its whatever you prefer}, onion powder, and italian seasoning onto peppers and tomatos and let cook for about 5 minutes or till veggies are tender {you can also add some salt too if you wish I do}
  8. remove from heat and place into a bowl to sit
  9. now place your bread oil side down into same pan to toast but DO NOT crowd or they will not cook evenly
  10. after 3 minutes useing a fork check to see if you reached desired color, if so turn all bread
  11. make sure you only turn them once or they will become soggy
  12. after evenly toased remove from heat and place on a platter or plate
  13. return veggies to pan to continue heating for 1-2 minutes then with a teaspoon place your veggies on your bread
  14. serve and enjoy!!!

Takes about 20-30 minutes start to finish depending on the amount being prepared.
*Note: any cut veggies that have not been drizzled with oil can be placed in a container with a lid for up to 3 days and used again!!!!
