Tomato, yellow pepper, & orange pepper Bruchetta

Tomato, yellow pepper, orange pepper, and spices sauteed in olive oil then placed on a piece of french bread toasted in olive oil.

  1. drizzle a small amount of 100% olive oil in skillet and heat on med-low heat
  2. cut up tomatos and peppers into small cubes and set aside
  3. on a plate lay out slices of bread and drizzle with small about of olive oil
  4. when skillet is heated place in peppers and tomatos so they over bottom of the pan but dont heap {heaping causes them to become soggy and unevenly cooked} you may find that you need to drizzle with more olive oil {if so add a little at a time make sure it cooks down some or it will become soggy and greasy}
  5. sprinkle garlic {or add fresh garlic clove its whatever you prefer}, onion powder, and italian seasoning onto peppers and tomatos and let cook for about 5 minutes or till veggies are tender
  6. remove from heat and place into a bowl to sit
  7. now place your bread oil side down into same pan to toast but DO NOT crowd or they will not cook evenly
  8. after 3 minutes useing a fork check to see if you reached desired color, if so turn all bread
  9. make sure you only turn them once or they will become soggy
  10. after evenly toased remove from heat and place on a platter or plate
  11. return veggies to pan to continue heating for 1-2 minutes then with a teaspoon place your veggies on your bread
  12. serve and enjoy!!!

Takes about 20-30 minutes start to finish depending on the amount being prepared.
*Note: any cut veggies that have not been drizzled with oil can be placed in a container with a lid for up to 3 days and used again!!!!
